I love bread. And I mean, I really love bread, so being gluten free, I was not happy. I have tried a lot of gluten free bread available in supermarkets, and although some are good, and some are not so good, none compare to non gluten free bread.
But I have tried this really simple recipe to make fresh gluten free bread, with only a couple of ingredients. I made this in my Air Fryer which has a bread making setting, but it’s that easy, you can make it in the oven, I promise.
This is the recipe I followed (I didn’t have buttermilk so used the option of full fat milk):

Although the recipe says that gluten free bread doesn’t need double proofing, I did do that with my loaf, so I suggest leaving your bread to proof for at least 2 hours so that it rises.
Gluten free bread is different to non gluten free bread, so it’s a little wetter than the bread dough for non gluten free bread, so don’t panic if it doesn’t come together into a usual dough and you can’t shape it because it’s too sticky . It was too wet to mould into a shape, so I just scooped it out of the bowl and put it on the baking paper.
This gives you spongy, gluten free bread, that you actually want to eat. Perfect for a vegetarian bacon sandwich, or just warm and dipped in olive oil and balsamic vinegar – yum!
Gardening Tip:
Although it’s cold outside, there are some vegetables that you can start to plant indoors. If you are planting brassicas or tomatoes, you can do this now. Just make sure you keep the seeds in doors. I have planted Broccoli, Cabbage, Cauliflower, Tomatoes, and Pak Choi. Keep them somewhere warm so that they can grow in a warm environment.
