This is the simplest recipe ever! Obviously you can make your own Gluten Free Puff Pastry, but Jus-Rol make a quick cheat. If you’re pushed for time, this makes an easy, tasty savoury treat.
Ingredients:
Jus-Rol Gluten Free Puff Pastry
6 on the vine cherry tomatoes
60g feta cheese
2 tablespoons of Basil infused oil (or olive oil and fresh basil)
Method:
Take the Jus-Rol Gluten Free Puff Pastry out of the fridge 10-15 minutes before you use it.
Preheat the oven to 190 degrees.
When ready, gently unroll the pastry on to a flat surface and use a sharp knife to cut the pastry into six equal pieces.
Gently brush the Basil Oil evenly over each section of pastry.
Cut each cherry tomato into quarters and press the four quarters gently into each section of pastry.
Cut the feta cheese into six equal strips, and then crumble one strip over each section of pastry.
Drizzle any excess Basil oil over the top of each pastry section.
If you do not have basil oil, you can use olive oil and just finely shop fresh basil to sprinkle over the feta cheese and tomato.
Use a spatula to gently place each pastry section onto a baking tray. Place into the oven for 20 minutes until the pastry is browned and flaky.
Enjoy as part pf a Tapas selection, or simply as a lunchtime snack!
