Avocado Pasta Sauce – Gluten Free and Vegan!

I love avocado and eat it so often it’s nice to find different ways to enjoy it.  This pasta sauce recipe is quick and simple to make, it’s fresh, light, and tasty – perfect for an evening dinner, or to add to your packed lunch.

Ingredients:

1 medium avocado

The juice of 1 lemon

2 Tablespoons of extra virgin olive oil

2 tablespoons of cold water

½ Teaspoon of salt

Dry Chilli Flakes to garnish

75g of uncooked pasta

Method:

Boil a pan of water and cook to the instructions provided for your pasta of choice – or see a previous blog post for the perfect gluten free pasta recipe.

While the pasta is cooking, place all of the ingredients, excluding the chilli flakes, into a small blender.  I use my nutribullet and it works perfectly.  Blitz all of the ingredients until they form a smooth, thick sauce.  If the sauce is too thick, simply add a further tablespoon of water to loosen and blitz again.

Once the pasta is cooked, drain into a colander and place the drained pasta back into the saucepan.  Add the avocado sauce and stir until all the pasta is covered.  The heat from the pasta will warm the sauce.

Spoon into a bowl and sprinkle the dried chilli flakes over the top (add these to taste), and enjoy!
